If you ever get a chance to go to P.F. Chang’s China Bistro, get the Asian Lettuce Wraps! They are phenomenal. The architecture firm I work at does the architecture/interior design for all the P.F. Chang’s around the country, and I’ve gotten to go there a few times because of that. I tried to recreate it at home, and the best part, is you can customize it however you like. This is what I used:
- 1 pound ground chicken (I buy Purdue brand, right by the ground turkey)
- 1 can water chestnuts
- shredded carrots
- cooked rice (I just make 1 cup rice to 2 parts chicken stock or water)
- green onions, chopped ( about 2)
- chopped garlic ( 2-3 cloves)
- optional: bean sprouts, celery, mushrooms, etc.
- lettuce
- favorite stir fry sauce (mine is House of Tsang brand Classic Stir Fry, found in the asian aisle).
First, I saute the green onions, garlic, and water chestnuts, and carrots for a few minutes until the carrot starts to soften. Add the ground chicken and cook until no longer pink. Add any other veggies you like and stir in the stir fry sauce. That’s basically it. Cut the head of lettuce in half to make a nice base for the filling. Serve about 1/2 a cup of the mixture in the lettuce, add some rice and wrap it up! I wonder if you could use left over turkey in place of the chicken in this?? I just may have to try that!
